Red chicken with tomatoes

4.                    Thai ginger                    2           tps
5.                     Red cherry paste         2           tps
6.                     Tamarind paste            1           tps
7.                     Lime leaves                    4          no
8.                     Sweet potatoes              225     gms
9.                     coconut milk                   2 ½       ml
10.                   cherry tomato                225        gms
11.                   Fresh cilantro                  3             tsp
12.                     fragrant size                   5            tsp
1.       Heat the corn oil in a large preheated woke or heavy based skillet.
2.       Using a sharp knife thinly slice the chicken add the chicken to the woke or skillet and stir fry 5 min. until lightly browned .
3.       Using a sharp knife peel the sweet potatoes.
4.        Add the coconut milk and sweet potatoes the mixture the woke and bring to a boil for 20 min until the juice start to thicken and reduce.
5.       Add the cherry tomatoes and cilantro reduce curry and cook for a additional 5 min. stirring occasionally. Transfer to serving plate and serve hot.
