how to prepare hyderabad mutton biryani


                            HYDERABADI MUTTON BIRYANI


                                      

Ingredients:

1 kg          Rice
1 kg         Mutton
100 gms   Green Chillies
50 gms     Fried Onion
1 bunch   Coriander Leaves
1bunch    Pudina
2               Lemon
1/4           Curd
1/4 kg      Ghee
10 gms    Cardamom
10 gms    Cinnamon
10 gms    Cumin seeds
10 gms    Cloves
40 gms    Ginger
20 gms     Garlic

Method:
Wash mutton and take it in a vessel.
Grind green chillies, ginger, garlic, spices, fried onion, and mix them all, then add this mixture to the meat.
Then add curd to it, mix the stuff thoroughly. Leave the material for half an hour.
Take 2 litres of water in a vessel and put it on the stove.
When water boils well put the rice in the vessel. Take out the semi-cooked rice and spread it on the meat and spices mixture as a layer. Take some more rice and spread as second layer. Finally, spread the fully cooked rice.
Prepare a mixture of one cup of boiled water and 1/4 kg ghee and spill it on the rice.
Now put a plate on the vessel and seal the edges with dough. Put the vessel on the stove, cook for 15 minutes on medium flame.
Then turn off the stove. Leave the stuff for 15 minutes.
Hyderabadi mutton biryani is ready to serve.

HOW TO MAKE Veg dum biryani

10.                chili powder                   1          tsp
11.                turmeric                          ½         tsp
12.                salt                                 10        gm
13.                cashew nuts                   15         gm
14                 peanuts                           15        gm
15.                 fat                                 150       gm
16.                salt                                to taste

Method:
Grained together coconut, cumin, turmeric, chili powder and onions and extract milk.
Clean and soak rice and gram.
Prepare vegetable add pear and carrots to the heated fat and blanch tomatoes.
Cook till pear and carrots we tender boil. Peel and slice potatoes, fry in hot fat till brown remove.
Fry rice and gram add coconut milk and vegetal stock when rice is throw water ¾ . add cooked vegetables and salt.
Cook on a slaw fire with live coal on top of the lid. When dry, remove and serve garnish with friend potatoes and fried sustains cashawnats and peanuts.



how to make Shahi Tukra

INGREDIENTS :                         

Dread slice                     4
Sugar                          400     gms.  
 Milk                           300      ml
Saffron                         a  pinch
Cardamoms                 2           no
Cashew nuts powder        a  pinch
Pasta chi nuts              15        gms
Fat to deep fry            15        gms
 Silver paper

Method:
The bread: slice of the crust and trim the edges to make discuss. Heat ghee in a kadhai and deep fry over low heat until  golden brown & crisp.]
The Raba chi: put milk in a kadhai bring to boil reduce to medium heat and stir constantly for 30-35 minutes then add sugar and stir until dissolved. Now add saffron and stir.
The syrup: Boil sugar with water(approximately 150 ml) to make a sugar of one string connsistenry add cardamom powder & stir.
Color:-light brown.
Garnish: with crushed cardamom chopped nuts.
Serving suggestions: serve hot.

how to make Dahi ki chutney

1.                 Plain yogurt                450         ml.
2.                 Salt                             ¾           tsp
3.                 Black pepper   1          pinch
4.                 Onions                        45          gms
5.                 Granger                        5           gms
6.                 Garlic                           5           gms
7.                 Mint leaves                   5           gms
8.                 Red chili powder           1           pinch
9.                Green coriander             2           tsp

Methods:
Put the yogurt in a bowl.
Until smooth  and creamy.
Add all the other ingredients except the red chili powder and mix well.
Sprinkle the chili powder over the top as a garnish.
