Caramelize pears and chocolate sauce

1.                  Pears                          2            no.
2.                  Sugar                         100         gms
3.                   Cinnamon                 20           gms.
4.                    Cardamom              10            gms
5.                    Cloves                     10            gms
6.                    Star anise                  2              no.
7.                    Chocolate sauce        4              tsp


Method:
1.       Peal pears and do not remove the stem.
2.       Boil water and add cinnamon, star anise, cardamom claves and boil.
3.       Add pears to the water and reduce.
4.       Cool it down and cut into length wise.
5.       Divide the pear and pour the melted chocolate sauce over it.


QUALITY STANDERDS:
COLOR: Brown.
GARNISH: Chocolate.
