delicious Sparkling mint juleps mocktail recipe

Sparkling mint juleps


caster sugar   1 cup
roughly chopped mint leaves   ¼ cup
water    1cup
soda water   750 ml
Ice cubes and mint sprigs to serve

Combine sugar, mint leaves and water in a small saucepan. Stir over low heat without boiling until the sugar has dissolved. Bring to the boil and simmer for five minutes. 
Pour into a small jug and place in the fridge until chilled. Once chilled, strain through a sieve into a large serving jug, add soda water, ice cubes and mint leaves and stir.
